Palak Lauki Moong Dal Soup
INGREDIENTS (1 serving)
- Palak (spinach) – 1 cup chopped
- Lauki (bottle gourd) – 1 cup chopped
- Yellow moong dal – 1 tbsp
- Flaxseed (alsi) – 1 tsp
- Ghee – 1 tsp
- Jeera – ½ tsp
- Hing – 1 pinch
- Haldi – 1 pinch
- Black pepper – optional, 2–3 crushed (skip if acidity)
- Ginger – ½ inch
- Water – 2½ cups
- Salt – to taste (rock salt preferred)
PRE-PREPARATION :
1️. Moong dal soaking (do not skip)
- Wash moong dal 2–3 times
- Soak in warm water for 30–40 minutes
2️. Spinach preparation
- Wash spinach thoroughly
- Blanch in boiling water for 1 minute only
- Immediately transfer to cold water
- Drain & chop
METHOD :
- In pressure cooker add:
- Soaked moong dal (drained) ,Lauki , Spinach, Ginger, Haldi, Water (2½ cups)
- Pressure cook -2 whistles on medium flame.
- Switch off, let pressure release naturally.
- Blend lightly using hand blender
- Texture should be thin & sippable, not thick
- Heat 1 tsp ghee in pan for tadka
- Add jeera → let it crackle
- Add hing , (Optional pepper)
- Add blended soup
- Simmer 2 minutes only
- Switch off flame
- Add 1 tsp flaxseed powder
- Mix well
