- Boiled eggs – 1 whole + 2 egg whites
- Lettuce – 1 cup (50 g)
- Cucumber – ½ cup (75 g), chopped
- Tomato – ½ cup (75 g), chopped
- Red onion – 2 tbsp (20 g), finely chopped
- Avocado (optional) – ¼ medium (50 g)
- Cashew mayo – 1 tbsp (15 g)
- Extra virgin olive oil – ½ tsp (2.5 ml)
- Lemon juice – 1 tsp (5 ml)

- Fresh cilantro/basil – 1 tbsp
👨🍳 Method
- Add lettuce to a bowl (base layer).
- Add cucumber, tomato, onion, and avocado.
- Chop boiled eggs and place on top.
- In a small bowl, mix all dressing ingredients well.
- Pour dressing over salad and toss gently.
- Garnish with cilantro/basil and serve immediately.
