Ingredients :-
- Rice - ½cup
- Arhar dal- ½ cup (washed and soaked for 1 hour)
- Oil - 2 tsp
- Cumin seeds- ½ tsp
- Mustard seeds - ½ tsp
- Hing -¼ tsp
- Dry chillies -2
- Black peppercorns -6-7
- Curry leaves -10-12
- Dry red chillies -2
- Garlic cloves -3-4
- Green chillies -2
- Onion -1 (finely chopped) or shallots -4
- Tomato -1 (finely chopped)
- Kashmiri red chilli powder-1 tsp
- Sambar powder -1 tsp
- Turmeric powder - ¼ tsp
- Tamarind pulp -1 tsp
- Water -4 cups
- Salt to taste
- Fresh coriander leaves
- Ghee to pour over
Method :-
1.Wash and Soak
- Wash the rice and dal thoroughly 2–3 times to remove excess starch.
- Soak them together in enough water for about 1 hour.
2.Prepare the Tempering (Tadka)
- Heat some oil in a cooking pot. Once the oil is hot, add hing (asafoetida), cumin seeds, mustard seeds, and whole black peppercorns.
- Let the spices splutter — this releases their aroma and infuses the oil with flavour.
3.Add Aromatics
- After the seeds crackle, add crushed garlic, green chillies, whole red chillies, fresh curry leaves, and chopped onions.
- Sauté everything for a few minutes until the onions turn slightly soft and the garlic becomes aromatic.
4.Cook the Tomatoes and Spices
- Add chopped tomatoes and salt. Cook until the tomatoes soften and turn mushy.
- Now add kashmiri red chilli powder, turmeric powder, and sambar powder.
- Mix well.
5.Add Rice, Dal & Liquid
- Drain the soaked rice and dal and add them to the cooking pot.
- Pour in enough water (usually 3–4 times the quantity of rice & dal if you want a khichdi-like soft texture).
- Add tamarind pulp for a tangy, sambar-style flavour.
- Mix everything well to combine the spices with the rice and dal.
6.Pressure Cook
- Close the lid and cook for 4 whistles on medium heat.
- Let the pressure release naturally. When opened, you will get a soft, flavourful, sambar-style khichdi.
7.Garnish & Serve
- Add freshly chopped coriander leaves on top.
- Drizzle ghee for added aroma and richness.
- Serve hot and enjoy a comforting, tangy, and delicious meal!
