Amaranth Breakfast Smoothie (vegan)

Ingredients
- Almonds- 8
- Walnut- 2 (whole)
- Cashew- 5
- Figs- 2 (dry)
- Dates- 2
- Melon Seeds- 10 gm
- Chia/ sabja seeds- 1 tsp (5 gm)
- Banana- 1 ripe
- Puffed amaranth- 20 gm
- Fresh mint- for garnishing
- Pomegranate pearls- for garnishing
Method
- Wash almonds, walnuts, cashew, figs, dates, melon seeds thoroughly and soak them 1 hour to overnight after adding chia seeds/ sabja seeds.
- Deseed the dates.
- Add one roughly chopped banana.
- Add puffed amaranth.
- Blend everything to a smooth paste.
- You can add ice-cubes/ cold water to adjust consistency.
- Pour into a smoothie jar.
- Garnish with some fresh pomegranate pearls and fresh mint.
