Foxtail Millet Appe Recipe
Ingredients:
For Batter:
Foxtail millet – 100 g
Dhuli urad dal– 50 g
Methi dana (fenugreek seeds) – 5 g
Water – as needed
Salt – to taste
For Vegetable Mix – 1 cup (finely chopped onion, red bell pepper, carrot, capsicum, beans, sweet corn, green chilli)
For Cooking:
Ghee or oil – for greasing appe pan
Instructions:
Wash & Soak:
Rinse foxtail millet, urad dal, and methi dana 2–3 times in water.
Soak them together in enough water for 8 hours or overnight.
Prepare the Batter:
Drain the soaked ingredients and grind them in a grinder jar with some water to make a smooth batter.
Transfer the batter to a large bowl and mix with clean hands (helps fermentation).
Cover and keep the batter overnight for fermentation.
Add Salt & Veggies:
Once the batter is fermented, add salt to taste and mix well.
Add the 1 cup vegetable mix (finely chopped onion, red bell pepper, carrot, capsicum, beans, sweet corn, green chilli) and mix thoroughly.
Cooking the Appe:
Heat and grease an appe pan with a little oil or ghee.
Fill each mould to ¾ capacity with batter (they will fluff up while cooking).
Cook on low flame for about 10–15 minutes, covering with a lid.
Drizzle a few drops of ghee on top, then flip the appe gently.
Cover again and cook the other side for 7–8 minutes or until golden brown.
Serve:
Once cooked from both sides, remove from pan and serve hot with your favorite chutney (coconut, mint, tomato, or curry leaves chutney).
